Victoria’s PB & J On the Fold

Okay so maybe PB & J’s aren’t the trend anymore. In fact they were really only trendy in the kindergarten playground. But you don’t have to be embarrassed to admit it; everyone loves a good peanut butter and jelly sandwich. Victoria’s PB & J on the fold is the berry best peanut butter and jelly sandwich that you will ever bite into. It’s buttery, creamy, sweet and the peanut butter just gently spills over the crust of the bread. What does “on the fold” mean? On the fold means that everything is spread on one slice of bread and then folded in half. The bite on the fold is the ULTIMATE bite. You’ll believe it when you try it.

Attention: Don’t skip any steps

Step 1: Toasting the bread on ONE side

Believe it or not, this step is very important. Toast the bread only on one side in the oven on the broil setting for about 5 minutes. You should end up with the face up side golden brown and toasty, slice on the left, and one side still soft and warm, slice on the right. I like to use whole wheat bread, but you can use any bread than can be folded in half symmetrically. WHY? toasting the bread only on one side makes for a SUPER DOUGHY inside of the sandwich. The soft bread combined with the peanut butter is just heaven.

Step 2: Butter it up

When the bread is done toasting put a generous tab of butter on each slice and let it melt slightly before spreading. The butter really makes this sandwich extra luscious and creamy. Buttery deliciousness.

Step 3: Peanut Butter Time

Now its time to spread that smooth peanut butter all over that gorgeous golden toast. Do not be shy here, we all know this is the best part. Isn’t it just the most satisfying feeling to get a scoop of thick peanut butter from the jar and spread it like velvet on the bread.

Step 4: This is my Jam

With a CLEAN knife, spread the jelly on top of the peanut butter in a graceful fashion. You want the peanut butter and jelly to be friendly, make sure they are swirled together, but not completely mixed. My favorite flavors of jelly for this sandwich are blackberry and apricot. I like jam to be thick with chunks of fruit inside that burst with flavor.

Step 5: Serving it On the Fold

Fold each slice in half making sure not to tear the bread in half, after all the special part IS the folded edge… Watch the sweet creamy goodness spill over the edge of the crust as your mouth waters and you begin to crave that PERFECT bite on the fold.

Dear Mom,

I know this is your favorite thing to eat. You like it with your coffee, for lunch, a snack. Anytime anywhere. At least once a day I hear your elegant voice calling “Victoria can you pleeeaaase make me your peanut butter and jelly sandwich”. I can just hear you bat your eyelashes. I know, I know. You love the way the butter adds a salty richness as it seeps into the soft toast. You love how I add just the right amount of peanut butter and jelly, the perfect balance is hard to find. But most of all, you love how I make it on the fold. When you get that first creamy, bursting bite. Right. On. The Fold.

Victoria’s luscious peanut butter and jelly sandwich is buttery, sweet and provides the perfect bite on the fold dripping with creamy goodness.

Ingredients

2 slices whole wheat bread, or any thin bread that can be folded in half

1 tabelspoon butter

4 tablespoons creamy peanut butter

2 tabelspoons jam or preserves 


Instructions

  1. Set the oven to broil on high.
  2. Place two slices of bread on a baking tray and place in the oven when heated.
  3. Toast the bread for about 5 minutes or until face up side is golden brown but not too crispy. Do not flip the bread over!
  4. Take the tray out of the oven and flip the toasts over so that the soft side is face up. Place a 1/2 tablespoon of butter on each slice.
  5. Let the butter melt slightly before spreading.
  6. Spread 2 tablespoons of peanut butter on each slice. Don’t spread all the way to the edge. This prevents all of it from flowing out once folded in half.
  7. With a clean knife, spread one tablespoons of jam on each slice and swirl together slightly.
  8. Fold the slices vertically in half without tearing the toast.
  9. Serve immediately or wrap in parchment paper and save for later!

Notes

  • Pick a slice of toast that is symmetrical, and large and thin enough to fold in half.
  • Don’t spread the peanut butter & jelly all the way to the end of the crust. When you fold the toast in half, the fillings with spread perfectly to the edge.
