I’m not a vegan, but when it comes to gravy I prefer mine delicious minus the turkey stock and drippings. Gravy should check off all the necessary criteria: creamy, savory, pourable, smooth, delicious… I can go on. This vegan cashew gravy ticks all of the boxes. The cashews make it extremely creamy while the dash of soy sauce adds the perfect umami, and the maple adds a hint of sweet. It pours beautifully over vegetables, stuffing and even turkey (if you’re not vegetarian). This vegan gravy will please everyone at the table, from the little kids to the traditional gravy lovers.

How to achieve the Perfect Vegan Gravy

People have high expectations for gravy, and the die hard Thanksgiving goers want it to be just right. Unfortunately, the vegans/vegetarians are usually left with no sauce. This vegan cashew gravy is perfect for the vegans and everyone else.

Let’s make it CREAMY: to make vegan gravy creamy use raw cashews as the base and blend blend blend until completely smooth.

How about that SAVORY touch: to make your gravy umami and salty add soy sauce, onion powder and garlic powder.

That DRIZZLE though: to get the perfect thickness, add one tablespoon of flour or cornstarch, then once blended heat in a saucepan and stir until thickened.

A Healthier Option: Vegan Cashew Gravy vs Traditional Gravy

This vegan cashew gravy makes for a MUCH healthier option than traditional gravy. While turkey drippings provide a high amount of saturated fat, cashews provide healthy fats that contribute to a healthy diet and your omega-3 fatty acid needs. As Easy as Blend and Stir

The thing that makes this recipe so simple is that all you have to do is throw your ingredients in a food processor or blender until creamy, then heat in a saucepan. Most gravys require more steps and assistance to achieve the perfect flavor and consistency. In this case, the ingredients and tools do all the work, and it is truly a no fail recipe.

This vegan cashew gravy is extremely creamy, with the perfect savory flavor and hint of sweetness. The thickness is perfect and makes for that drizzle to die for.

Ingredients

  • 2 cups unsweetened almond milk, or any nut/oat milk
  • 1/2 cup raw unsalted cashews
  • 2 tablespoons soy sauce
  • 2 teaspoons maple syrup
  • 1 tablespoon flour
  • 1 tablespoon onion powder
  • 1/4 teaspoon garlic powder
  • salt and pepper to taste

Instructions

  1. In a food processor add milk, cashews, soy sauce, maple syrup, flour, onion and garlic powder, and salt and pepper.
  2. Blend until completely smooth. May take some time, be patient!
  3. Pour into a saucepan and heat over medium heat. Whisk continuously until thickened. Remove from heat and serve!

Notes

  • If gravy become chunky while heating, transfer back to blender for a final blend.
  • If you prefer a thicker gravy, add 1 cup of milk to blender and keep adding until you achieve desired thickness.
