Description
These soft baked peanut butter protein cookies will melt in your mouth, and are filled with cacao nibs and protein bar bits.
Ingredients
1 cup of creamy peanut butter
3/4 cup granulated sugar, or coconut sugar
1 large egg
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup cacao nibs
2/3 cup protein bar bits, about 2 protein bars
Instructions
- Preheat the oven to 350°F.
- In a medium sized bowl, stir together peanut butter, sugar, baking soda and salt. When halfway combined, mix in the egg.
- Chop the protein bars into small pieces, about the size of chocolate chips. Fold in the cacao nibs and protein bar pieces.
- Place a sheet of parchment paper on a baking tray and drop 2 tablespoonfuls of cookie dough. You can fit about 6-8 per tray.
- Bake at 350°F for about 12-15 minutes. Remove tray from oven and let cool on a wire rack for about 15 minutes.
