What is the best part of a burger? The secret sauce. Well, as good as it may taste, I’m not a big fan of the condiments served at fast food chains. Here I’ve made a version of secret sauce that tastes just as delicious, but is much more elevated. Instead of ketchup we use whole, chopped heirloom tomatoes. Only a touch of mayonnaise, and my favorite gourmet relish from Stonewall Kitchen. This sweet chutney is reminiscent of secret sauce, but does not taste anything like fast food. I dare you to put this on your burger next time you’re grilling from home.

Simple Ingredients

  • Heirloom Tomatoes: The base
  • Mayonnaise: The cream
  • Relish: The punch
  • Maple Syrup: The sweet
  • Salt: The enhancer
  • Pepper: The spice
  • Sesame seeds: The topping

Stonewall Kitchen

Stonewall Kitchen has my favorite condiments from jams to dressings to sauces. They use whole, fresh ingredients, and they create unique and innovative flavors. The first thing I tasted from their collection was their Country Ketchup, I literally go through jars and jars of this. It is sweet, spicy and chunky. It tastes good on everything, and is such a great replacement for traditional ketchup. The idea of this chunky ketchup inspired me to use fresh tomatoes to make this secret sauce chutney. I wanted to turn a traditional, nation-wide loved sauce, into something bright, healthier and still crave-worthy.

My recommendations from Stonewall Kitchen are the Country Ketchup, Farmhouse Green Relish, Butternut Squash Pasta Sauce and Maple Vanilla Almond Butter.

Secret Sauce Chutney

Description

An elevated and healthier take on the traditional secret sauce for hamburgers. It’s fresh, sweet and will bring back all the fast food feels but in a gourmet way. Use it on burgers, steak or roasted potatoes. 


Scale

Ingredients

3 heirloom tomatoes, chopped

3 tablespoons mayonnaise

3 tablespoons relish 

3 tablespoons maple syrup

1 teaspoon salt 

1/2 teaspoon ground pepper

sesame seeds for topping


Instructions

  1. Chop the heirloom tomatoes in medium sized chunks and transfer to a bowl. Drain the excess liquid using a strainer, then lightly pat the tomatoes dry.
  2. Add the mayonnaise, relish, maple syrup, salt and pepper to the tomatoes and mix.
  3. Store in a jar in the refrigerator. When ready to serve family style transfer to a bowl and top with sesame seeds, or serve it directly on a hamburger, steak etc. and finish with a sprinkle of sesame seeds.

Notes

  • If stored in a jar it will last a couple of days, it is best served fresh.
  • The sesame seeds are reminiscent of the sesame burger bun. You can also sprinkle with garlic or onion flakes.

The Pairings for this Secret Sauce Chutney

  • Put it on a classic hamburger or hot dog.
  • Serve it with homemade fries or my Spicy Cinnamon Sweet Potato Fries
  • Top it on steak.
  • Make a bruschetta by putting it on toasted sourdough or baguette and adding fresh avocado.
  • Make my Burger Buddha Bowl: Base of brown or white rice topped with ground beef, cheddar cheese, shredded lettuce, avocado AND of course the Secret Sauce Chutney. Sprinkle sesame seeds on top.
