This oat milk mocha with marshmallow cream is the drink you want to wake up to. It’s the drink you want to bring to work. It’s the drink you take to-go in a cup cup, that everyone wants a sip of, but you selfishly want every delightful sip for yourself. The hot chocolate and coffee are pair made in heaven. The strong espresso intensifies the chocolate flavor making it extra rich. The homemade marshmallow cream is just perfect creamy topping to complement every hot sip. It’s light, but still fluffy and a little stick to reminisce the traditional marshmallow fluff.

Why Oat milk?

Well, first off I’m intolerant to products high in lactose, milk or cream for example, so I’m drawn to the dairy free alternatives. Nowadays, there are so many out there, from coconut milk to oat milk to every nut you can possibly imagine milk. Different recipes will do better with different milks, I opt for coconut milk in sweet or savory recipes, I like oatmilk in my coffee and almond milk in my cereal.

Oat milk adds a beautiful depth of flavor to this drink, it’s a surprisingly creamy and sweet milk with an earthy tone. Just a dash goes a long way, and makes this drink decadent and healthier all at the same time. For this recipe I used the Original Oat Milk, but you can use the Barista as well.

I also like to use oat milk for the health benefits. It’s rich in vitamins like A, D and B12. Oat milk is also high in calcium so you don’t lose out when you’re drinking non dairy milk. There is more fiber than any other milk or milk alternative.

I only have eyes for Oatly

Okay on to the fun part! My favorite oat milk is Oatly, which is probably no surprise, everyone loves it! Before trying this oat milk I wasn’t sold on the concept. Until one day, I ran out of all my almond milk and all my coconut milk. i found myself at the grocery store desperate for my cereal companion. Low and behold the only milk left was oat milk. I figured it was worth a try, I am open to new things after all. I took one sip and never turned back.

It’s creamy, perfectly sweet and has a richness to it that tastes amazing alone or mixed into your favorite drink. (For some reason this milk tastes amazing with honey nut cheerios, please try). After falling in love with this milk, I went on to buy my all time favorite sweatshirt from Sassy Pud featuring Oatly milk. “My oat milk frees all the cows from the yard”. Yes it does!

The easiest way to make this Oat milk Mocha: Nespresso

Hellooooo Nespresso. The easiest way to make this rich, perfectly balanced mocha, is with a Nespresso machine, or something similar. All you need is one dark roast pod and one hot chocolate pod! It’s as easy as pressing a button literally. Make 4 oz of dark roast espresso, on the strong setting if your machine has one. Then in the same cup make 4 oz of hot chocolate. Then just add a dash of oat milk, a dollop of homemade marshmallow cream, and a sprinkling of cocoa powder. This is so so easy, no mess, no measuring and no trying to find the perfect mocha ratio.

Ingredients

8 oz strong coffee, or two Nespresso coffee pods

8 oz hot chocolate, or two Nespresso hot chocolate pods

1/4 cup oat milk

6 tablespoons homemade marshmallow cream, check recipe below

Cocoa powder and sea salt optional


Instructions

If using a Nespresso machine

  1. In a to go cup or mug, make 4 oz of coffee using the pod on the “strong” setting on your machine. Not all machines have this setting.
  2. In the same cup make 4 oz hot chocolate using the pod.
  3. Repeat with second cup.
  4. Warm oat milk in a small pot over low heat.
  5. Add two tablespoons of oat milk to each coffee.
  6. Top each with 3 tablespoons of homemade marshmallow cream and a sprinkling of cocoa powder. You can also add a SMALL sprinkle of sea salt.
  7. Take to go or enjoy at home.

The Homemade Marshmallow Cream

A cross between whipped cream and marshmallow fluff, this dollop of fluffy sweetness is the ultimate mocha topper. It’s just so good, I can’t explain. It’s richer than just your whipped cream topping, but not as cavity worthy as store bought marshmallow fluff can be. The marshmallowy flavor and texture is slightly is toned down by the airy whipped cream to make perfection. Paired with the chocolatey espresso drink it’s like smores all over again!

Only a few ingredients:

  • marshmallows
  • light corn syrup
  • heavy whipping cream
  • vanilla extract

Description

A cross between marshmallow fluff and whipped cream that is a light and fluffy sweetness, the perfect topping for your hot mocha.

Ingredients

5 oz marshmallows, about 24 large marshmallows

1.5 tablespoons light corn syrup

1/2 cup heavy whipping cream

1/2 teaspoon vanilla extract


Instructions

  1. Fill a large pot with water and boil over medium heat.
  2. Put the marshmallows and corn syrup in a medium sized glass bowl.
  3. Place glass bowl over pot of boiling water to melt the marshmallows. This is called a double boiler, it helps avoid burning the marshmallows and is more controlled than melting them directly in the pot. 
  4. Stir as the marshmallows melt, and remove from heat when completely melted.
  5. In a stand mixer with the whisk attachment, whip the heavy cream and vanilla extract until fluffy but not stuff peaks. It’s important not to over whip!
  6. Add the melted marshmallow cream into the mixer and mix on medium speed until combined. It should be fluffy and semi stiff.
  7. Place in a jar or bowl covered in plastic wrap and chill in the fridge until ready to serve.

Notes

  • This is is also a great dip for strawberries or topping for pancakes.
  • When mixing the marshmallows as they melt, spray the spoon or spatula with non stick spray to avoid sticking.
