Newsflash: I love figs. Figs by themselves are a gift sent from heaven. They are beautiful and sweet, delicate. They hold a flavor like no other. What I love about figs is they are so versatile, you can dry them, use them in desserts, make jam or pair them with savory foods like cheese. The other day I had the best figs OF MY LIFE, thanks to McCalls in Los Feliz, California. I was inspired to make a fresh little treat using figs that didn’t transform them too much, or take away from their incredible flavor. These fresh fig and watermelon bites are everything you look for in a fresh and juicy summer bite. Sweet and extremely refreshing, they show off the vibrant colors and flavors of these summer fruits.

How to pick out your Figs and Watermelon

Watermelon

  • heavy for its size
  • yellow spot where it sat in the ground
  • hollow sound when you flick it
  • not too shiny
  • look for a dried stem not a green one

Figs

  • soft to the touch but not mushy
  • dry and smooth skin, unbroken
  • round plump shape
  • no sour smell!
  • not too much green at the top

A little sugar, a little spice

These little bites are layered with watermelon, peppered greek yogurt, figs and a generous drizzle of honey. They are as refreshing as any juice can be, and all the more satisfying and fun to eat. The yogurt adds an extra texture and freshness, while also adding a kick of spice… and protein. The black pepper complements the syrupy honey and rich figs, but you can leave it out of you’re not a fan of spice.

These fresh fig and watermelon bites make a colorful appetiser for a summer pool party. They are sweet enough to be a healthy dessert, and refreshing enough to be a cooling snack. Easy to pick up, bite size and delicious, what else could you ask for. What a way to spruce up this season’s sweet fruits!

Description

Fresh fig and watermelon bites layered with peppered greek yogurt and a drizzle of honey. An amazing way to use this sweet summer fruits.


Scale

Ingredients

12 small and flat watermelon squares, about 2” wide and long

1 lime

6 fresh figs

3/4 cup greek yogurt

A few pinches black pepper

Honey for drizzling


Instructions

  1. Slice watermelon into small squares, about 2 inches long and wide and 1/2 inch high.
  2. Squeeze halves of a lime over all the pieces. 
  3. Cut the tops off the figs, and slice the figs in half lengthwise. You can cut the end off of each half to make them flat.
  4. In a small bowl mix the greek yogurt with a few pinched of cracked black pepper.
  5. Top each watermelon piece with one tablespoon of yogurt and a half fig.
  6. Drizzle all the bites with honey and more cracked pepper (optional).
